Chicken Salad Chick to Open 300th Locale
Florida eatery one of 47 chain is adding this year

Chicken Salad Chick (Atlanta) announced it will open its 300th locale, in Melbourne, Fla., on May 7. That milestone comes as the fast-casual chain opened 37 locations in 2024, followed by 47 planned for this year. (Thus far, its 2025 openings include locales in Edmond, Okla.; Metairie, La; Colorado Springs, Colo.; Baytown, Missouri City and Pflugerville, Texas; Braselton, Ga.; Bowling Green, Ky.; Westminster, Md.; Lakeland, Fla.; and Chesapeake, Va.)
The new Chicken Salad Chick in Melbourne is owned and operated by first-time franchisees and mother-daughter duo, Allison Gibson and Cathy Brown, with Allison’s husband, Stuart, and her father, James, also serving as partners. The chain features Southern-style chicken salad made from scratch, as well as side salads, soups, sandwiches and desserts.
Founded in 2008 in Auburn, Ala., by Stacy and Kevin Brown, Chicken Salad Chick now operates restaurants in 21 states, with plans to enter a 22nd – Kansas – later this year.
